Hi there!
I would ask you to answer me following questions:
First, I saw some monkey´s in the screenshots, and in the charakter - symbols in top of the immortalcities (http://www.immortalcities.com) page , too. But, I miss the original animals of the ancient Egypt like cats or some dogs!
Second time, I would ask wich shops are in the game? I mean, yeah, there were weaver, potter and papyrus maker, but some different jobs like hunter, drawer, jewelery maker, mountains man and so on

Mountains? In Egypt?
Farmers would occasionally go off hunting to provide food for their families. There are also fishermen. Scribes = "drawers" for schools, temples, and official jobs like tax collector and monument overseer, etc.
I am sure we will see the return of at least the Nile crocodile and hippopatamus. You can't go too much by the current screenshots out there they were done early on and things have probably changed.
Leaving out cats and dogs would be a great omission. I don't think that they'd forget them considering the status that they held in Egyptian religion and beliefs.

Actually that makes me think.
There were hunters in Pharaoh, IIRC.
Now. As we have seen, in this game, grain will be the currency. And also, as Tony indicated, all settlements will be along the riverbanks, or some other source of water - so there will always be some place to grow the grain, supposedly. We also saw that when you don't provide enough grain to feed the people, they will go off gathering food on their own.
So that makes me think that maybe then in this game, there will not be a hunter job in its own right (at least not for food), but instead, people who don't have enough grain to feed themselves will go and hunt. So, hunting would not be an organized occupation as before, but rather a somewhat extreme action by the people to keep from starving.

Hunting as a "job", I'm not sure about. It would be accurate to see farmers going off to hunt for food when they needed it and there was no crop to tend.
Egyptians used a variety of weapons on the hunt including, spears, arrows, throw-sticks, nets, and a boomerang type of weapon. Ancient Egyptians also used animals to hunt other animals, greyhound dogs were popular and tame cheetahs may have been used in the hunt.
The first hunts in ancient Egypt were done on foot and close to home. After the first three dynasties extended their cultivated areas and drained the marshes, most of the larger game moved out of the area. Chariots were used after their introduction and were mainly used by the pharaoh. Pharaohs and nobleman were the only ones privileged enough to hunt large game. Since domestication of animals was occurring in ancient Egypt, hunting wild game was regarded as the sport of kings and dignitaries. The Pharaoh employed a master of the hunt along with an audience and a specialized group called beaters. The Pharaoh usually hunted gazelle, antelope, ibex, little ox, Barbary sheep, and ostriches.
Peasants did hunt but it was usually geese, ducks, cranes, and quails that they ate. Both upper and lower classes ate beef, although the rich ate it frequently and the poor ate it only on festive holidays along with sheep and goats. Pork was eaten, but was looked down upon because it has an association with the evil god, Seth.

Though it is to be expected, another animal that is in the game is the crocodile!

I'm pretty sure I've also seen a hippopotamus on one of the early screenies somewhere... Which is also to be expected I guess. :)

We like animals in the game, so we're putting in as many as we can. We have cats, crocs, and hippos for sure. Plus some more (I'm not going to give everything away), though there really aren't that many dogs in Egypt.
Keith's history on hunting fits what we have remarkably well. Common people can hunt for food if they need to (the Nile valley has enormous numbers of waterfowl like geese), or they might fish or pick fruits, depends on what's easiest for them. Nobles will do some big game hunting too, for fun.

I've heard they also had tame baboons which were used as watchdogs/market guards. Does anyone know if that's true?

Some kings even create game preserves and stocked them with animals that were not native to Egypt for the purposes of hunting.
Queen Hatshepsut kept wild animals such as baboons, giraffes, cheetahs, and exotic birds imported from the land of Punt. King Akhenaten built a wild animal enclosure. This is the reason why animals unknown to the environment have been found in tomb paintings.
