After the resident of a Watchtower or Hunting Lodge dies, when a new replacement of the same class comes to town, they cannot be selected to fill the existing building. Instead you have to demolish the old building, select the new person, then upgrade their building to the higher type.

If they were of the same class, you wouldn't have to upgrade their building. Remember that upgrading a house often changes the class of the resident. So you can't replace a dead Hunter with a Trapper; instead, you have to wait until a Hunter joins the recruit pool. Again, if you have to upgrade the person's building later on, then you are not trying to replace that townie with one of the same class.

To be honest, it's probably just cheaper to do that than press "Advertise" until someone of the same class shows up.

It should work as it does with farmers, any farmer can take up everything from small farm to plantation.
Also it’s the same craftsman who works in all the different buildings; you can demolish the building and then upgrade it.

One trick is to kick out low level farmers and herders and replace them with higher level one. This gives you backup high level characters for your party if someone dies, also a good idea to keep herders at high level if you find a dragon egg.

Farmers are different. Their farm just gets bigger they don't change duties.
A trapper is different than a hunter, for example the weapon they use. A dragoneer is completely different in his duties to that of a rancher or herder. A Smith is different than a fletcher, etc

Usually if one dies, you should get a replacement if you push advertise right away. About 90% of the time the replacement comes immediately.
