Destroy building = lost resources?

I was wondering if I destroy a shop, and I don't have a warehouse, would the goods that it produces be lost?

No, as far as I know.

If you don´t want to build a warehouse, just list your clay at 80 bread per item on the market and it will be save kept :p

Im not sure how to get it back once I put something on the market.. say I changed my mind or it isn't selling

In the market view, there is a tab called My Listings, click that and you will see everything you are currently offering for sale, and a button to the right of each which will remove that from being offered.
