As I understand it, if I purchase MC through Steam, I can download it to both my desktop to play at home, and my laptop to play when traveling.

Do I have to be online and connected to Steam to play, even though this is a single player game? If so, then I won't be able to play on the plane when traveling.

PS to TM: You can thank Nile Online for this sale! I heard about NO on Rock, Paper, Shotgun, and then found out about MC when I registered on the forums here. :)

You can play offline, you just have an option to play offline.

Yeah once you download it you can select "Go Offline" from the file menu in Steam. It will allow you to play the game but stuff like chat and I think achievements won't be active.
