The World map shows me several sites with stone (limestone, etc).
It says to "Establish a Quarry" so you can then ship the stone to your city.
The overseers on the city map, however, have the "Oversee Limstone Quarry" greyed out and I don't see any buttons on the world map to open a quarry? So how do you get the limestone?

Keep exploring the world map. There are lots of new places to go, you need to send out exploratory expeditions to sites you can see to uncover other sites.
BTW, be sure to build steles for prestige once you complete explorations, assuming you have access to a granite quarry. They boost prestige nicely.

Your overseer only works with locations within your city. To get import stone, click on the World Level (WL) site and it will show you what you need to open the site (on the left). If there's a pointing hand icon next to the "fee", you have enough to open the site. Click on it and your items will be onroute to the site (though you won't see anyone leave with them or anything).
Once you get the message that the site is open, go back and check it. You may be already importing (which you can turn off), or you may need to open particular sub-sites (usually the case with statue, stele, and obelisk sites).
To import stone, you'll need to place a barge landing (locations can be tricky by they don't need to be "within" your city limits), and a Cargo Dropoff Point (which can be within your city--distance from the barge landing doesn't matter).
