I wanted to mine some granite, so I began to place a labor camp. After completing the camp, I set my overseer to mine the granite, and he went off to do it. However, the laborers just sat at home doing nothing. I thought, "maybe their a little too far away", so I place some closer homes, but the laborers are still sitting around like a bunch of lazy bastards (can I use this word! )! Am I missing something.
Now if the overseer is able to make the trek to quarry, so should the laborers, the fools!

I've seen this with Basalt before, not sure what causes it.
I think that the laborers won't go to the quarry until there is something in the city calling for granite (stele, obelisk, trading, etc.).
That may help you, but maybe not. :D

Thank you, let me see. But shouldn't they still mine it anyway?

Yes what Yahya said: Place a stele or obelisk base, let it build (bricks), have an overseer set to "oversee construction". When he visits the completed base, it will trigger the quarry laborers. It's different than basalt and I find it unintuitive (on my "feature enhancemet" list). But it works.
I wanted to mine some granite...

You would think. But I'm pretty sure that they won't.
Now, IIRC, limestone is a whole other story. They'll mine that like crazy and completely cock up your infrastructure! :)
